You don't need ribeye money to eat well. You need to know where to look.

Flat Iron ($10–12/lb) – Consistently one of the most tender cuts on the animal, just behind filet. Rich, beefy, and cooks fast. It used to get ground because of tough connective tissue — once butchers learned to remove it properly, this became one of the best values in the case.

Sirloin Cap (Picanha) ($12–15/lb) – The fat-capped top of the sirloin. Not heavily marbled inside, but that thick cap slowly bastes the meat as it cooks. Slice it thin against the grain after cooking and it rivals far pricier steaks for flavor and texture.

Tri-Tip ($10–12/lb) – Leaner, but deeply beefy. Grill it or try this recipe and slice properly. It won't eat like filet — it eats like steak.

Why ribeye and filet cost more
You're paying for tenderness and familiarity. Flat iron delivers near-filet tenderness at half the price. Tri-tip brings more beef flavor than filet ever will. Demand drives markup as much as quality.

Modern Etiquette: 6 Non-Negotiables

Etiquette isn't about being polite for politeness' sake. It's about signaling competence, respect, and attention to detail. Most men ignore at least three of these.

1. Don't be on your phone when someone is talking.
If someone is giving you their time, give them your attention. Your phone can wait. Checking texts mid-conversation says what's on your screen matters more than who's in front of you.

2. Stand to greet someone.
Shows respect, presence, and confidence. Staying seated signals you can't be bothered. Standing says you're fully engaged.

3. Always confirm plans the day before.
You're signaling reliability. It takes 10 seconds and eliminates ambiguity. People remember those who follow through without needing a reminder.

4. Say the person's name when you meet them.
People remember those who remember their name. Most people forget names within 30 seconds—don't be most people.

5. Take care of personal hygiene and grooming.
Shower, floss, trim your nails, find a good cologne. A man who cannot take care of himself cannot be trusted to take care of others in his life.

6. If you borrow something, return it in better condition than you received it.
Fill the gas tank. Clean the tool. Return it promptly. This single move signals integrity more than anything you could say.

Small gestures compound. Master these.

Two Unexpected Cocktails to Pair With Steak

Everyone defaults to an Old Fashioned. Here are two that hit just as hard — and signal you know your way around a bar.

Sazerac
Rye whiskey, absinthe rinse, Peychaud’s bitters, sugar, lemon peel.

Bold enough for steak without overpowering it. The herbal anise from the absinthe cuts through fat and resets your palate between bites.

How to make it:
Chill a rocks glass and rinse it with absinthe, discarding the excess. In a mixing glass, muddle a sugar cube with Peychaud’s bitters and a splash of water. Add 2 oz rye and ice. Stir until cold. Strain into the prepared glass. Express a lemon peel over the drink and discard.

Islay Scotch & Soda
Simple — but only if you use the right Scotch.

Go peaty: Laphroaig or Ardbeg. The smoke mirrors the char on your steak. The soda keeps it crisp. A lemon twist brightens the edge.

How to make it:
2 oz Islay Scotch over ice. Top with cold soda water. Express a lemon twist over the glass and drop it in.
