Shrimp Tacos With Tomatillo Avocado Salsa - 45g of Protein
Three tacos. Under 500 calories and 45g of protein. And they actually taste like something you’d order, not something you’d tolerate.
Makes about 8 tacos.
The Salsa (Make This First)
15 tomatillos, halved
Juice from 6 limes
1/2 bunch of cilantro, leaves and stems
1/4 white onion
2 jalapeños or 1 serrano
2 avocados
Salt to taste
Add everything to a blender and pulse until smooth. Taste for salt and adjust as needed. This makes more than enough for the tacos, which is a good thing. Use what you need here, then put the rest to work on eggs, grilled chicken, rice bowls, or a bowl of chips. It keeps in the fridge for a few days and somehow gets even better. The Slaw
1 bag shredded cabbage
1/4 cup diced white onion
1 tomato, diced
Handful of cilantro, chopped
Juice from 2 limes
Salt to taste
Toss everything in a bowl. Let it sit for at least 10 minutes so the lime breaks down the cabbage slightly. This gets better the longer it sits.
The Shrimp
1 pound shrimp, peeled and deveined
Salt, pepper, garlic powder
1 tbsp oil
Season the shrimp generously. Heat the oil in a non-stick skillet over medium-high heat. Cook 2 to 3 minutes per side until pink and slightly charred. Don’t overcrowd the pan. Work in batches if needed.
The Build
Warm your corn tortillas in a dry skillet or over an open flame. Add shrimp, a generous pile of slaw, and one tablespoon of salsa per taco.
