The Taco Upgrade
Ditch the packet seasoning. A real street taco takes 20 minutes and ruins ordinary taco nights in the best way.
The Meat
Grab skirt steak or flank steak. Season it with cumin, chili powder, garlic powder, salt, and a squeeze of fresh lime. Sear it in a screaming hot cast iron skillet for 3 to 4 minutes per side. Let it rest for 10 minutes, then dice it into small pieces. That is your carne asada.
Quick Pickled Onions
Thinly slice a medium red onion. Toss it in a jar or bowl with a ½ cup apple cider vinegar, ½ cup warm water, and a pinch of sugar and salt. Let it sit while you cook. In 15 minutes, you have tangy, bright pink onions that elevate everything.
The Build
Double up small corn tortillas. Warm them on a dry skillet until slightly charred. Load them with carne asada, pickled onions, fresh cilantro, and a squeeze of lime. Top with the salsa below.
That is it. No packet. No microwave. No excuse. Just a real taco built by hand in your own kitchen.
Bonus: Mettle Salsa Verde
I have been making this salsa for over 10 years. It gets requested at every party I attend, and I share the recipe every single time. It takes 15 minutes and works on way more than just tacos.
• 15 tomatillos, sliced in half
• Juice from 6 limes
• 1/2 bushel of cilantro, leaves and stems
• 1/4 white onion
• 2 jalapeños or 1 serrano
• 2 avocados
• Salt to taste
Throw all of it in a blender and blend until smooth. That’s it.
Because eating well is never just about the food.

Thousands of albums at your fingertips, with the warmth and presence only classic equipment can deliver. Some enthusiasts are even getting into analog tape again. Yes, reel-to-reel decks are making a comeback too.
It is all happening in 2026. Analog is back.

Soul Hum Elixirs: The NA Drink That Feels Like a Cocktail
Last week we kicked off our NA series with beer. This week, we are going deeper.
The non-alcoholic space is booming, and for good reason. Whether it is health, weight, better sleep, or just wanting a night off without reaching for water, the options have gotten legitimately good. We have been sampling dozens of them, and this is one that stood out.
Soul Hum Elixirs is one of the more interesting NA options we have come across. Natural ingredients. Functional botanicals. Flavors that do not taste like an afterthought.
They make two expressions: Uplift and Unwind.
Uplift brings smoky pineapple, a hint of cayenne, and a bright citrus finish.
Unwind leans into blood orange, tartness, and notes of bitters.
Pour either over a large ice cube and it is the closest thing to a craft cocktail we have tried without a drop of alcohol. Both have real complexity and a zesty bite you do not expect from an NA pour. They also make an excellent base for mocktails.
Our go-to was simple: 2 ounces of either elixir, a splash of soda water, and a slice of lime.
